Mushroom Biriyani .

I had lost this recipe and I was delighted to find it yesterday! Hence my blogging it today so I don’t lose it again.

It’s a lovely recipe if you fancy a curry in a hurry!

I made this slimming world friendly which would be syn free!

So here it is!

Spray a pan with fry light and fry mushrooms and finely chopped onion.

Or if not slimming world use 40g of butter (yum).

Spoon the mushroom and onion mixture into a bowl leaving any juice in the pan.

Add 1.5 teaspoons on Gram masala to the pan.

Add a small spoon of curry powder .

Add a thumb of finely chopped ginger and a mug of basmati rice.

Throw in a few Cardomon pods and 4 Bay leaves.

Dissolve a stock cube in 2 mugs of hot water and add the mushroom and onion.

Mix it all together and put into an oven proof dish with a lid.

Put into the oven for about 20- 30 mins.

Go and put your feet up with a nice Beer 🙂

Mix in fresh coriander and lots of Lemon juice.

Put a tea towel over the top for about 10 mins and then serve.

Delicious!

I am now glad I won’t lose this recipe again!
