Vegan soul soup

This soup was an accident, my little girl fancied soup for tea …. and why not?

This soup as it says makes your soul go aaahhhh and all your troubles will sail away for those moments.

It’s cheap to keep too…..

If you fancy an hour in a soup soul cloud…. here goes…. ( believe me it will happen)

Get yourself

1 Onion finely chopped (ish)

1 Leek finely chopped (ish)

3 sticks of celery finely chopped (ish)

A mug of yellow split peas

A very small bit of fresh ginger finely chopped.

1 stock cube

Hot water

Salt as you fancy …

Fresh chopped parsley

Hello, you fancy making this…. I don’t blame you …. it’s going to go viral with Vegans for sure, just watch 🐵

All I say is try this and give me a bit of feedback 🙂

So I gently softened an onion in oil, with celery and leek until soft .

Then add the yellow split peas with plenty of hot water, boil and then turn down and cover.

When the yellow split peas start to soften add the stock.

Keep checking if you need to add more water.

Once the yellow split peas are soft mash any formed split peas into a liquid , or liquidise.

Then add seasoning to taste and add fresh parsley finely chopped ….

I leave it for an hour to have a party, and then ….. serve into a mug and add your favourite bread…. feel healed 💜💜💜


Vegan Yorkshire pudding

I am a firm believer that being Vegan is about eating more and better, with a smugness that animals are not suffering because of me.

This was my first attempt at it and they were joyous 😋

I love a roast dinner and I love Yorkshire pudding, I particularly like these and prefer them to the version that contain egg.

First put oil in your oven dish and put into a hot oven 220 degrees.

Put one cup of self raising flour

2 large, heaped teaspoons of Gram flour

Pinch of salt

Mix in 2 cups of your chosen Vegan milk, I love Cashew milk.

Whisk into a smooth batter.

Pour into your hot oven dish and don’t open the door for 20 mins.

This recipe could be adapted to make vegan toads in the hole,!

Roast Celeriac

Roasted Celeriac experiment!

I heard a rumour that Celeriac can be treated like meat.

Having successfully completed Veganuaryj with ease and feeling well and eating healthy food it seems like it’s knocked my need to eat cheese and milk and was never that keen on eggs.

I am now on a new mission of enjoying Vegan food without so much of a ‘what can I eat? ‘

I had deluded myself that my children need Cows milk in their diet, and yesterday I cancelled my milk man. They can drink my favourite Cashew milk too!

So here to the trials what can I do with Celeriac!

I have scrubbed this old lumpy bumpy beauty and rubbed Rapeseed oil in all the nooks and crannies 🔥

I am slow roasting this in Harissa paste on a bed of Beetroot , Celery , Garlic, Carrot, Onion trying to sear it first.

I plan to have Cold cuts for serving with a roast and fine deli slices.

Vegan Homity Pie

I love Vegan food, as a very long term Vegetarian I guess about 25 years of absolutely no meat , fish or poultry (proud face) I am on and off the Vegan road.

I feel healthier and happier when on a Vegan mission and it’s getting tastier and easier.

So obviously veganuary challenge was something I was ready for!

I also have a male friend ❤️😂 coming around after work tomorrow and so I need something ready for us to eat (I won’t get home until late) so there needs to be something ready to go ….

I have made a lovely big pie for tomorrow!

6 medium potatoes in bite size pieces

1 and 1/2 onions chop them up

Cashew/soya/almond milk 2 tablespoons

Vegan butter 2 big spoons

100 g grated vegan cheese such as violife (UK)

Fresh Parsley finely chopped…. lots of it!!!


Vegan short crust pastry

Line a greased oven dish with rolled out pastry.

Peel and shop the Potatoes into bite size pieces, boil until tender.

Gently fry onion until soft.

Once soft add finely chopped garlic, Vegan butter and milk warm this through.

Add Parsley, Potatoes and cheese.

Stir through then add the mixture to an oven proof dish with pastry case.

Cook in the Oven for 50 mins at 180 degrees

Eat hot or cold, I am going to serve mine with salad, piccalilli , pickles

Juddyjo’ sweet and sour Halloumi

Very late to the party here! I have found Halloumi woo hoo (the new stew) I made beer battered Halloumi fish and chips and mushy peas….. that was me ‘hooked’ pardon the pun!

So what else can I do with this lovely stuff?

A fabulous versatile little love, that stays in the fridge like a soldier waiting to come on duty…..

So tonight my friends is juddyjo’ s sweet and sour Halloumi!!!

Let’s do this…..

Fry an onion…..

Add 3 ripe fresh tomatoes….

Add 2 green chillies…

Add soy sauce……

Add…. 3 pineapple rings of pineapple lol chopped up and the juice from the tin.

Add lots of generous sprinkles of sweet chilli sauce

Keep tasting!

Oil another pan and colour the halloumi that you have chopped into cubes on all sides.

Add to the sauce.

Serve with nice things….. I have chosen Tortilla wraps, cold shredded ice burg lettuce and spring onion thrown in for good measure!

And with the addition of a hot fiery Sriracha sauce to kill me off 🔥

Courgette and butter bean fritters ðŸŒ±

I have made a very simple little snack! I had high hopes for this and it hasn’t disappointed me.

At this time of year vegetable growers are proudly plucking the last of their crops, giving away gluts of this and that.

Well if you have searched and found this look no further!

This is a very cheap recipe if things are a bit tight, or you are a scrooge.

You will need…..

A tin of butter beans

2 small or one large courgette or a fancy pants one if you so do wish, grate it finely and squeeze excess water off.

Herbs and spices of your choice

(I used ….

fresh coriander

Crushed coriander seeds

Cumin seed

Garam masala


Chick pea flour

And added chilli powder and a chillies finely chopped to half of the mix as my children are not chillie heads yet!

I mushed up the butter beans with a fork and mixed in the rest of the ingredients.

Made into little patties and coated in chick pea flour.

If you have time put them in the fridge.

Shallow fry the fritters for about five minutes. Turning each side.


Vegan Quiche

I made these Lovely little Vegan quiches today, rather than use a flan type dish I decided to use a muffin tin.

The great thing about doing it this way is I have 6 delightful little tartlets with potentially 6 different flavoured combos!

I used ready to roll shortcrust pastry, it really is no trouble to make these.

I then mixed a block of firm silken tofu with a mixture of 2 tablespoons of chick pea four mixed with 100mls of water, also adding 1/2 a teaspoon of Tumeric for a yellow colour a similar consistency to pancake batter.

I then whizzed it up in my mini blender and set aside.

Grease the muffin tin with vegan spread, roll out pastry and cut into circles to fit into the muffin tin.

Add in the vegetables that you fancy, in each pastry cup.

I used, mushroom onion and tomato in some. Broccoli and spring onion in another. I would have used sundried tomato if I could open the jar 🙄.

I added plenty of the tofu mixture to each tartlet and then sprinkled smoked paprika on top, and some chives.

I then baked for 40 mins…your home will smell divine!

Let them cool, and serve the little devils up with some green leaves, chutney or a pickle or four these would fool anyone!


Vegan recipe on the go

Well this is a new little recipe I am making tonight! Going to blog on the go!!!

I basically have no idea what I am cooking, I have put some baked sweet potato wedges in the oven with olive oil, I am planning to add garlic and sliced green chillies and smoked paprika at some point! I also have some  cooked white rice that I will add to the oily leftover pan at a point, got some cauliflower, coriander…. I also have wine to drink so this could get silly! 

Will update when I decide what to do next ha ha 🙂


I am hoping for crunch on my sweet potato wedges, they seem pretty soft, added a chopped green chillie peeper and a garlic clove and smoked paprika…smells divine 🙂

Once they crisp up, I am going to remove them and use the oil left to add some veggies, herbs and rice… I think 🙂 


Ha ha my sweet potatoes smell lush and want them to crisp up!

I have chopped up some seasonal veggies, onion, courgette, chard oh and not so seasonal cauliflower, once I remove those wedges I am going to shove that lot in the oven in the left over oil, with lots of love, herbs, and think about adding the rice 🙂


Ta da….

once the rice and vegetable mix is heated through, very soothing to mix this up around the baking tray, I added a few pinches  of mild curry powder and hot sauce, I use Psycho juice, it’s an amazing hot chilli sauce 🙂 

Mix it all in, add the sweet potato wedges, mix them through, return to the oven and then serve up a huge portion of this, as it’s crazy amazing!

The sweet potato has a meaty type texture, the crunchy skins with chewy bits and then soft flesh, mixed through with different textures of vegetables and a braised tasty rice, comforting Vegan heaven!

I even thought a sprinkle of pumpkin and or sunflower seeds would be lovely, serve with Green salad if you fancy, or big slices of Beef tomato.

It would be lovely cold for lunch the next day, doubt there will be any left though 😋

Mushroom Biriyani .

I had lost this recipe and I was delighted to find it yesterday! Hence my blogging it today so I don’t lose it again.

It’s a lovely recipe if you fancy a curry in a hurry!

I made this slimming world friendly which would be syn free!

So here it is!

Spray a pan with fry light and fry mushrooms and finely chopped onion.

Or if not slimming world use 40g of butter (yum).

Spoon the mushroom and onion mixture into a bowl leaving any juice in the pan.

Add 1.5 teaspoons on Gram masala to the pan.

Add a small spoon of curry powder .

Add a thumb of finely chopped ginger and a mug of basmati rice.

Throw in a few Cardomon pods and 4 Bay leaves.

Dissolve a stock cube in 2 mugs of hot water and add the mushroom and onion.

Mix it all together and put into an oven proof dish with a lid.

Put into the oven for about 20- 30 mins.

Go and put your feet up with a nice Beer 🙂

Mix in fresh coriander and lots of Lemon juice.

Put a tea towel over the top for about 10 mins and then serve.


I am now glad I won’t lose this recipe again!

Slimming world syn free Roast Dinner

It was absolutely delicious and all free on the slimming world diet! I used a Quorn Roast which is syn free, I find that letting it go cold and serving it at room temperature is much more tasty!

The potatoes were easy, par boil a good spud such as Maris Piper and then tip into a roasting pan.

Add some chopped Garlic.

Dissolve a good quality Vegetable stock cube into about 300mls of hot water and add to the roasting pan. Spray the tops of the potatoes with fry light spray. Cook on a medium heat, turn regularly.

Spray them one further time, when they are nice and crispy they are done!

Syn free onion gravy…

Fry 1 red and one white onion until soft.

Add a very small clove of garlic.

I then added 1 teaspoon of Gravy salt as its Vegetarian, you can use a red oxo cube if you are not veggie! Then add about 500mls of water. I also added a pinch of sage and Thyme. Bring to the boil and then simmer for one hour. I then mashed up the onion so the gravy was smooth.

For the Sage and onion stuffing……

I used roughly 3/4 of a mug of cous cous and added 1 chopped up Red onion. I then added a tablespoon of Sage some salt an pepper and then added hot water to it until it was nice and soft and not too dry.

Baked it in the oven and voila! This was a really nice suprise and wonderspouse said he preferred it to the usual one that half of the Uk stuff up a chickens jacksy!

Served up with your favourite Vegetables and there you have it!! A lovely Sunday Roast… I spent my syns on a nice glass of Red wine to enjoy with it!!
