Fritters!

  

These fritters are gorgeous! whats even better is they are simple and quick to make and there are endless posibillitys of flavours!
These happen to be Vegan/ vegetarian.
They are made with gram flour batter made with 50g of flour mixed with 100mls pf water.
I used cooked broccoli and red leiceter cheese for one flavour, and sweetcorn for the other and both had spring onion and chive.
gently fried on a medium heat for 10 mins and my little boy enjoyed them with a dollop of ketchup!
these are going to be great for campervan cooking! tin of sweetcorn to had and a bag of flour! really chuffed with these 🙂 sneaky way to get healthy veg and chickpea goodness into my boy!
Gorgeous cold too (nice to find a little snack in the fridge)

Leftover cauliflower and chickpea curry becomes a tasty Biriyani! 

Well you know that cauliflower and chickpea curry I made last week. Well I had plenty of leftovers!

So tonight’s dinner is a delicious Biriani, easy peasy to make.



Cook a mug of Basmati rice to instructions.

I warmed through the left over curry and added a courgette chopped up, some chopped coriander and a squeeze of lemon.

In an oven dish put a layer of rice then a the curry, finish with the remaining rice.

I scattered some coriander over the top and then warmed through in the oven until piping hot.

Served it with lemon wedges and poppadoms.

Spanish Tortilla! Such a simple recipe with so much history, to add onion or not? Huge arguments may have been had over time! Three main ingredients works for me Eggs, potato, onion! However to jizz mine up I sprinkled smoked paprika:)
Here is the recipe..,

Finely slice a few potatoes, fry them in fry light or olive oil depending if you are slimming over about 20 mins until the potatoes are soft. Chop up a large onion (preferably not a red onion or they don’t look right) and add them to the potatoes and when they start to get soft add a sprinkle of white pepper. I also have microwaved the potatoes sliced up for quickness instead!
Mix up as many eggs as you fancy but it has to be at least six! Add a splash of milk if you fancy.
Fry the potato and onion mix util you want to eat it!
Add it to the eggs which will now be beaten.
Yes I said add the potato mix to the eggs!
Leave it in a bowl for 10 mins to let them get to know each other….. And then ooh whammy shove it all in a frying pan!
Use a spatula!!!
Let the runny egg get cooked!
Get a plate, turn the tortilla over.
Make sure it is cooked!
ALWAYS use free range eggs!!!
Sprinkle with fresh parsley and smoked Paprika 😍
I love this served cold with green salad and pickles 🙂

Vegetarian slimming world scotch eggs

I have made myself a lovely slimming world vegetarian lunch. These scotch eggs are delicious and synfree on the slimming world diet. I feel like I am on a summer picnic as I tuck in!

What I did….
Boiled 3 eggs
Crumbled 4 uncooked Quorn sausages and mixed a beaten egg in and added smash mash potato powder until the consistency thickens.
Dipped the cooled egg in more beaten egg and moulded the sausage mixture around.
Final coating of smash and cook in the oven.
lovely with pickles, gherkins or piccalilli!

Slimming world diet coke quorn recipe!

Thought I would post about the ‘new’ vegetarian slimming world recipes I have been making but vegetarian versions.
Diet coke chicken is a popular ‘syn free’ dinner. I made this with quorn which is a ‘free food’ in the slimming world diet.
Here’s what I did….
1 packet of quorn chunks
1 tin of chopped tomatoes
1 large red onion sliced up
1 large red pepper chopped up
1 packet of button mushrooms
2 cloves of garlic
1 teaspoon of paprika
1 teaspoon of Brown HP sauce
1 can of diet coke
Fry light

Salt and pepper

Easy peasy to make! Fry the onion and garlic briefly. Add in the mushrooms pepper and Quorn cook until lightly browned.
Mix tomatoes, HP sauce and diet coke in a jug and mix together, using diet coke as an ingredient seems very strange I have to admit! The recipe actually is supposed to be Worcester sauce but as that is not vegetarian friendly I opted for HP sauce.
Then add to the quorn and pepper mixture add the paprika and cook until it reduces down add salt and pepper to taste.
I served this lovely sweet and sour barbecue tasting dish with boiled rice!
Lovely!

Chickenless soup for the soul

Well, well,well what have we got here then?
I have made a delicious soup that you will just love!!!
I have been ever so jealous of all these claims that chicken soup is one of the best things to love, nurture and heal the soul.
Well hold back on those chickens folks this one really is soothing soul food!!
Surprise is it actually is very, very chicken flavoured without a chicken anyway near it!
The story is……
I had sweet corn in my veg box a couple of weeks on the trot due to life being a bit rocky I haven’t been making the most of my veg box. I really felt a bit sorry for them all golden and lovely so decided there was only one thing…. Soup!

What I did….
Gently softened 3 little onions
I then scraped the corn off of 4 corn cobs and added to the onions. I added a cup full of yellow split peas boiled water and then simmered until the yellow split peas were soft.
I then added 2 veggie stock cubes cooked for a but longer and then blitzed it in the food processor.
The ‘chicken’ flavour is quite astonishing and the soup is lovely! My only wish is that I had used really fresh corn as I am sure the texture would be smoother!!!

Side dishes.

Some of the food I cook is a little way out. Tonight’s offerings are a little like that. On the menu after eating out for the last two days are some lovely unusual side dishes!
First up is a fresh beetroot with Capers and Pumpkin seeds.

Lovely how the sweet beetroot and salty capers compliment each other.

Next, is a wholemeal Pasta with feta and green and black olives with Green leaves.

Next up is a Potato salad with Tomato, Red Onion in a minty, White wine vinegar Potion!

That little mixture in the bowl is a mix of olive oil and red wine vinegar, ready to mix into the Potato mixture.

I sort of like these cold side dishes but it isn’t hot enough in the Uk for me to eat a cold meal. I am serving this up with a Marks and Spencer vegetarian Kiev! I might just also enjoy sautéed new potato in butter and white pepper, with the left over potatoes!
I love all these tasty mixtures and there will be plenty left for lunch. A lovely healthy change of feel good imaginative Food!

Fussy Toddler Winner Spaghetti

Toddler eating issues have been plaguing me. My *proud mummy * of a child that eats really well bubble has popped. He eats and throws it. He turns his head too. And then eats it when he wants it. Refuses when I offer *one more* Ugh!!!!!

I had a Eureka moment!!

Spaghetti!!

I remembered….

He loves it.

I decided if he won’t eat this then it’s definitely teething or some other Malady.

Oh yes! His little bowl that I filled to the brim with freshly cooked Pasta and vegetables *gone*

Scoffed!

A simple Onion, Red Pepper,Carrot, Celery, Garlic, Oregano and Basil mixed with a Tin of Tomatoes . Mixed into cooked Spaghetti.
Finely grated Cheese.
Black pepper (tiny bit for baby)

Little belly is full.

Red Lentil Kedgeree with Avocado and Tomato

Simple and delicious this will become a lifetime favorite for me, but lets you an I keep this recipe a secret it is simple and nutritious and speaks for itself……….where has this been all of my life?

150g of basmati rice

150g of red lentils

1 tbsp of Rapeseed oil

1 medium onion

1 tsp ground cumin

8 bruised cardomon pods

3 bayleaf

450 mls of vegetable stock

1 large ripe Avocado

large beef tomato

lemon juice

tbsp of chopped coriander

Soak the lentils for 20 mins and rinse well.

Fry the onion gently for 10 mins then add the cumin bay leaf and cardomon cook for a few moments stirring all of the time.

then add the rice, lentils and stock. bring to the boil then put a lid on the pan and simmer.

serve with a mixture of chopped avocado, tomato,mixed with lemon juice and coriander on top.
