Slimming world syn free Roast Dinner

  
It was absolutely delicious and all free on the slimming world diet! I used a Quorn Roast which is syn free, I find that letting it go cold and serving it at room temperature is much more tasty!

The potatoes were easy, par boil a good spud such as Maris Piper and then tip into a roasting pan.

Add some chopped Garlic.

Dissolve a good quality Vegetable stock cube into about 300mls of hot water and add to the roasting pan. Spray the tops of the potatoes with fry light spray. Cook on a medium heat, turn regularly. 

Spray them one further time, when they are nice and crispy they are done!

Syn free onion gravy…

Fry 1 red and one white onion until soft.

Add a very small clove of garlic.

I then added 1 teaspoon of Gravy salt as its Vegetarian, you can use a red oxo cube if you are not veggie! Then add about 500mls of water. I also added a pinch of sage and Thyme. Bring to the boil and then simmer for one hour. I then mashed up the onion so the gravy was smooth.

For the Sage and onion stuffing……

I used roughly 3/4 of a mug of cous cous and added 1 chopped up Red onion. I then added a tablespoon of Sage some salt an pepper and then added hot water to it until it was nice and soft and not too dry.

Baked it in the oven and voila! This was a really nice suprise and wonderspouse said he preferred it to the usual one that half of the Uk stuff up a chickens jacksy! 

Served up with your favourite Vegetables and there you have it!! A lovely Sunday Roast… I spent my syns on a nice glass of Red wine to enjoy with it!!

Spanish Tortilla! Such a simple recipe with so much history, to add onion or not? Huge arguments may have been had over time! Three main ingredients works for me Eggs, potato, onion! However to jizz mine up I sprinkled smoked paprika:)
Here is the recipe..,

Finely slice a few potatoes, fry them in fry light or olive oil depending if you are slimming over about 20 mins until the potatoes are soft. Chop up a large onion (preferably not a red onion or they don’t look right) and add them to the potatoes and when they start to get soft add a sprinkle of white pepper. I also have microwaved the potatoes sliced up for quickness instead!
Mix up as many eggs as you fancy but it has to be at least six! Add a splash of milk if you fancy.
Fry the potato and onion mix util you want to eat it!
Add it to the eggs which will now be beaten.
Yes I said add the potato mix to the eggs!
Leave it in a bowl for 10 mins to let them get to know each other….. And then ooh whammy shove it all in a frying pan!
Use a spatula!!!
Let the runny egg get cooked!
Get a plate, turn the tortilla over.
Make sure it is cooked!
ALWAYS use free range eggs!!!
Sprinkle with fresh parsley and smoked Paprika 😍
I love this served cold with green salad and pickles 🙂

Red eye fries recipe

Well if you are like me and love searching the web for a new recipe you know how it feels when you find one and think Ooh!!
I have seen pictures of this but not found the recipe, so I will bless the internet with my very own version 🙂
Mine is slimming world friendly and it will be all syn free on that eating plan. However, if I wasn’t on slimming world I would add lashings of full fat grated cheese!!
So here it is slimming world Red eye fries ……..mmmmmmm!!!

What I did……..
Potatoes cut into chunky chip pieces.
Fry light spray
Cheddar cheese low fat
Mustard seeds
Red chilli pepper
Hot sauce
Egg

What I did was par boil the chipped potato for a few minutes and then let them cool.
Spray all over with fry light and cook until crisped, sprinkle over chopped chilli pepper at last 10 minutes of cooking.
Fry 2 eggs in fry light and remove chips from the oven and place the eggs over the chips on a plate.
Mix cheddar and mustard seeds together and sprinkle over the top of the eggs and chips.
Return the plate briefly back to the oven until the cheese has melted.
Serve with salad.
Sprinkle hot sauce over the top for an extra kick!

Slimming world roast potatoes

Easter Sunday means roast dinner! And as we are on our health kick and losing the lbs as our clothes are getting a bit too snug I was a bit worried I couldn’t pull this one off.
We had a yummy roast dinner.
Roasted potatoes recipe was great and so made them syn free! So we could have as many as we liked 🙂

You need
potatoes
Fry light spray
Garlic
Stock cube

Par boil the potatoes for about 5 mins and then drain.
Dissolve one or two stock cubes in 500mls-1 litre of water.

Lay the potatoes in a roasting dish add enough stock to go half way up the roaring pan. Sprinkle garlic (optional) over the potatoes and spray the tops with Frylight. Roast in the oven for an hour the stock will reduce baste the potatoes intermittently.

Vegetarian cottage pie

All of this cold weather calls for warming, hearty comfort food.
I have been making this same recipe for years and it never has any leftovers.
Everyone has their own version of a cottage pie. This simple recipe has to be my favourite that I would recommend that you make from my little blog it’s for my vegetable cottage pie.

You need….
1 onion
4 sticks celery
1 plump parsnip
Carrots
Broccoli
Sprouts
(You can use any wintertime vegetable) the essential flavours I will not make it if I haven’t got parsnip or celery!
Red tub Bisto gravy powder
Mash potato
Cheese

What I do is ….
Fry an onion in olive oil
Add chopped celery, carrots, parsnip,sprouts, and cook until slightly soft.
Add boiled water and cook the vegetables for another 10 mins then add Bisto (in the red tub) yes I know but it tastes gorgeous in this dish 🙂
This will make a lovely thick gravy.

Spoon into a oven proof dish and then add loads of comforting mash.
Add lashings of cheese.

Cook in the oven covered with tin foil until golden on top.
In the last five minutes remove the tin foil to make the top golden and the cheese slightly crisp…..
Oh my!

Soulful vegetarian food heaven…….

Smoked cheese, sausage, new potato tasty family bake!

I am a food shopaholic.
This week I am trying to avoid the shops. Having a good old butchers at the cupboards and the fridge I have been busy trying to use stuff up.
Tonight’s dinner was rustled up with glee at accidentally having the ingredients for a dish I have made again and again in the past.
It is delicious.
A real hearty meal when you fancy something nice that will warm you up and fill you up. It’s a meal that will satisfy everyone and smells divine.
Easily to make early in the day to cook through and soothe the soul when ready to eat.

What to do…….
4 big handfuls of chunkily diced boiled new potato.
5 veggie sausages cooked and chopped up.
1 red onion
Spring onions
Cherry tomatoes
Bramble apple chopped up
Lots of smoked cheese
Olive oil
Salt and pepper

Fry the onion until soft
Add the chopped up apple and gently fry.
Add the potatoes and mix around carefully.
Add the sausages,tomatoes,spring onions and cheese and mix it all together.
Once it is all heated through and the cheese is melted over all of the ingredients (yum) put it in a dish ready to go In the oven. Scatter some extra cheese on top if you fancy.

It’s blowing a hoolie outside… Once little one is In bed I am going to tuck in with a lovely glass of wine….

Tasty camper van tatties!

We went out for a Sunday drive in our loved Oval Beetle. We got some much needed fresh air and sunshine and got home a little bit late. My toddler was quite hungry and I needed to rustle up something quickly.
I have brought my son up Vegetarian. I haven’t a clue what other people think about this but he is a very healthy thriving toddler.
I made him a delicious little meal which he chomped his way through!

What I did was sautéed two thinly sliced potatoes in olive oil. When they began to soften I added a sliced shallot and sliced vegetarian sausage, I also raided the mint from the garden and found some rosemary and fresh oregano in the fridge, chopped it all up and threw it in.
Turning the potatoes so they cook evenly. At the very end I added some baby spinach and halved cherry tomatoes. Cooked for a few minutes longer.
Everyone kept hovering around the pan asking for a taste.
Needless to say I had to make another batch for our supper, I added chillies to ours!
This will be a great little meal when we go camping in our VW camper! I can’t wait to cook this in the fresh air.

Side dishes.

Some of the food I cook is a little way out. Tonight’s offerings are a little like that. On the menu after eating out for the last two days are some lovely unusual side dishes!
First up is a fresh beetroot with Capers and Pumpkin seeds.

Next, is a wholemeal Pasta with feta and green and black olives with Green leaves.

Next up is a Potato salad with Tomato, Red Onion in a minty, White wine vinegar Potion!

That little mixture in the bowl is a mix of olive oil and red wine vinegar, ready to mix into the Potato mixture.

I sort of like these cold side dishes but it isn’t hot enough in the Uk for me to eat a cold meal. I am serving this up with a Marks and Spencer vegetarian Kiev! I might just also enjoy sautéed new potato in butter and white pepper, with the left over potatoes!
I love all these tasty mixtures and there will be plenty left for lunch. A lovely healthy change of feel good imaginative Food!

Nommity Pie

I haven’t used much of my Veg Box produce this week. I took some vegetables out of the fridge, what was I going to do with these?

Alas Nomnity Pie is born!

I sweat the Leeks in a pan and then added a chopped up bulb of Fennel and a cubed sweet potato.
I added a large garlic clove and 400 mls of soya cream.
Mixed in 250 g of cheese and let it melt in.
Finally I added Broccoli (about 4 big handfuls) mixed it around and then put a thick layer on a deep oven dish with a layer of mash potato on the top.

Pots and Pans

I was delving into my pot and pan cupboard and It gave me some thought? and I (lovingly) realised that this pan that I was searching for was seventeen years old….. Holy Moses!
This ‘cherry red pan ‘ is now battered and bruised, the scars of making many comforting meals. however there is one particular dish that this pan has cooked again and again through good times and bad and has been perfected over the years.
I went on holiday and ate in a Mexican eatery ( I was s new Vegetarian abroad) I ordered a funny potato thingy that took ages to cook. It didn’t matter as that’s what holidays are for after all.
I was presented with potatoes dressed In oil with herbs and chilli peppers with 3 different side dips. My taste buds came alive that day.
When I returned home I tried to recreate that dish.
It has been the dish that has stood the test of time. It is the dish my sister and I cook together and nurture together and enjoy. As the years have passed the type of potato to the strength of chilli and the addition of cheese have been changed and the dish gets better but the one thing that never changed was this dear old pan! He he!
I am not going to divulge the recipe yet! Believe me it will require its own forum!!!
