These fritters are gorgeous! whats even better is they are simple and quick to make and there are endless posibillitys of flavours!
These happen to be Vegan/ vegetarian.
They are made with gram flour batter made with 50g of flour mixed with 100mls pf water.
I used cooked broccoli and red leiceter cheese for one flavour, and sweetcorn for the other and both had spring onion and chive.
gently fried on a medium heat for 10 mins and my little boy enjoyed them with a dollop of ketchup!
these are going to be great for campervan cooking! tin of sweetcorn to had and a bag of flour! really chuffed with these 🙂 sneaky way to get healthy veg and chickpea goodness into my boy!

Spanish Tortilla! Such a simple recipe with so much history, to add onion or not? Huge arguments may have been had over time! Three main ingredients works for me Eggs, potato, onion! However to jizz mine up I sprinkled smoked paprika:)
Here is the recipe..,
Finely slice a few potatoes, fry them in fry light or olive oil depending if you are slimming over about 20 mins until the potatoes are soft. Chop up a large onion (preferably not a red onion or they don’t look right) and add them to the potatoes and when they start to get soft add a sprinkle of white pepper. I also have microwaved the potatoes sliced up for quickness instead!
Mix up as many eggs as you fancy but it has to be at least six! Add a splash of milk if you fancy.
Fry the potato and onion mix util you want to eat it!
Add it to the eggs which will now be beaten.
Yes I said add the potato mix to the eggs!
Leave it in a bowl for 10 mins to let them get to know each other….. And then ooh whammy shove it all in a frying pan!
Use a spatula!!!
Let the runny egg get cooked!
Get a plate, turn the tortilla over.
Make sure it is cooked!
ALWAYS use free range eggs!!!
Sprinkle with fresh parsley and smoked Paprika 😍<<<<<<<<<<<<<<<<<<<<

I have made myself a lovely slimming world vegetarian lunch. These scotch eggs are delicious and synfree on the slimming world diet. I feel like I am on a summer picnic as I tuck in!
What I did….
Boiled 3 eggs
Crumbled 4 uncooked Quorn sausages and mixed a beaten egg in and added smash mash potato powder until the consistency thickens.
Dipped the cooled egg in more beaten egg and moulded the sausage mixture around.
Final coating of smash and cook in the oven.
lovely with pickles, gherkins or piccalilli!
Thought I would post about the ‘new’ vegetarian slimming world recipes I have been making but vegetarian versions.
Diet coke chicken is a popular ‘syn free’ dinner. I made this with quorn which is a ‘free food’ in the slimming world diet.
Here’s what I did….
1 packet of quorn chunks
1 tin of chopped tomatoes
1 large red onion sliced up
1 large red pepper chopped up
1 packet of button mushrooms
2 cloves of garlic
1 teaspoon of paprika
1 teaspoon of Brown HP sauce
1 can of diet coke
Salt and pepper
Easy peasy to make! Fry the onion and garlic briefly. Add in the mushrooms pepper and Quorn cook until lightly browned.
Mix tomatoes, HP sauce and diet coke in a jug and mix together, using diet coke as an ingredient seems very strange I have to admit! The recipe actually is supposed to be Worcester sauce but as that is not vegetarian friendly I opted for HP sauce.
Then add to the quorn and pepper mixture add the paprika and cook until it reduces down add salt and pepper to taste.
I served this lovely sweet and sour barbecue tasting dish with boiled rice!
Simple, quick and cheap! Most of all tasty.
Boil spaghetti. I love the very long spaghetti!
A few glugs of Extra Virgin Olive oil in a bowl and a pinch of salt.
I chopped up one beef tomato that was lying about and a few cherry plum tomatoes that were at their ripest.
I tore up quite a few basil leaves and added them both to the olive oil.
I finely chopped a very small clove of garlic and added it to the tomato mix.
Waited for the spaghetti to cook and then mixed the lot together.
A final scattering of torn basil leaves and some Parmesan.
We went out for a Sunday drive in our loved Oval Beetle. We got some much needed fresh air and sunshine and got home a little bit late. My toddler was quite hungry and I needed to rustle up something quickly.
I have brought my son up Vegetarian. I haven’t a clue what other people think about this but he is a very healthy thriving toddler.
I made him a delicious little meal which he chomped his way through!
Why haven’t I made this before?
What I did was sautéed two thinly sliced potatoes in olive oil. When they began to soften I added a sliced shallot and sliced vegetarian sausage, I also raided the mint from the garden and found some rosemary and fresh oregano in the fridge, chopped it all up and threw it in.
Turning the potatoes so they cook evenly. At the very end I added some baby spinach and halved cherry tomatoes. Cooked for a few minutes longer.
Everyone kept hovering around the pan asking for a taste.
Needless to say I had to make another batch for our supper, I added chillies to ours!
This will be a great little meal when we go camping in our VW camper! I can’t wait to cook this in the fresh air.
Toddler eating issues have been plaguing me. My *proud mummy * of a child that eats really well bubble has popped. He eats and throws it. He turns his head too. And then eats it when he wants it. Refuses when I offer *one more* Ugh!!!!!
I had a Eureka moment!!
He loves it.
I decided if he won’t eat this then it’s definitely teething or some other Malady.
Oh yes! His little bowl that I filled to the brim with freshly cooked Pasta and vegetables *gone*
A simple Onion, Red Pepper,Carrot, Celery, Garlic, Oregano and Basil mixed with a Tin of Tomatoes . Mixed into cooked Spaghetti.
Finely grated Cheese.
Black pepper (tiny bit for baby)
I tasted these delicious Spiced potato patties from a little Deli and they are delicious. It was hardwork not to just devour it as I was eating it but I carefully tried to recognise the flavours! It’s not exactly the same but I will work on it.
You will need…
5 medium potatoes
1 small white onion
3 green chillies finely chopped
1 teaspoon of Garam masala
1/2 teaspoon Cumin
1 teaspoon of cayenne pepper
Handful of chopped fresh coriander
Good pinch of salt
Chick pea flour
What I did was ….
Boil 5 medium potatoes and cool then crush them roughly.
Fry the finely diced onion until soft add chilli and cook until soft.
Add the cumin and cook for a little longer.
Then add the Garam masala and Cayenne pepper, stir and then add the crushed potato.
On a gentle heat warm the potato through and mix together.
Season with salt to taste and add the chopped Coriander.
Mould the mixture into round shapes and coat with some chickpea flour.
Mix chick pea flour and water to make a batch of batter.
Coat each of the patties in batter and gently fry in sunflower oil in a griddle pan. It took about 5 mins each side.
These can be eaten hot or cold and are delicious! Vegan too which makes them taste all the better.
