Courgette and butter bean fritters ðŸŒ±

I have made a very simple little snack! I had high hopes for this and it hasn’t disappointed me.

At this time of year vegetable growers are proudly plucking the last of their crops, giving away gluts of this and that.

Well if you have searched and found this look no further!

This is a very cheap recipe if things are a bit tight, or you are a scrooge.

You will need…..

A tin of butter beans

2 small or one large courgette or a fancy pants one if you so do wish, grate it finely and squeeze excess water off.

Herbs and spices of your choice

(I used ….

fresh coriander

Crushed coriander seeds

Cumin seed

Garam masala

Salt

Chick pea flour

And added chilli powder and a chillies finely chopped to half of the mix as my children are not chillie heads yet!

I mushed up the butter beans with a fork and mixed in the rest of the ingredients.

Made into little patties and coated in chick pea flour.

If you have time put them in the fridge.

Shallow fry the fritters for about five minutes. Turning each side.

Voila!!

Juddyjo’ sweet and sour Halloumi

Very late to the party here! I have found Halloumi woo hoo (the new stew) I made beer battered Halloumi fish and chips and mushy peas….. that was me ‘hooked’ pardon the pun!

So what else can I do with this lovely stuff?

A fabulous versatile little love, that stays in the fridge like a soldier waiting to come on duty…..

So tonight my friends is juddyjo’ s sweet and sour Halloumi!!!

Let’s do this…..

Fry an onion…..

Add 3 ripe fresh tomatoes….

Add 2 green chillies…

Add soy sauce……

Add…. 3 pineapple rings of pineapple lol chopped up and the juice from the tin.

Add lots of generous sprinkles of sweet chilli sauce

Keep tasting!

Oil another pan and colour the halloumi that you have chopped into cubes on all sides.

Add to the sauce.

Serve with nice things….. I have chosen Tortilla wraps, cold shredded ice burg lettuce and spring onion thrown in for good measure!

And with the addition of a hot fiery Sriracha sauce to kill me off 🔥

Vegan recipe on the go

Well this is a new little recipe I am making tonight! Going to blog on the go!!!

I basically have no idea what I am cooking, I have put some baked sweet potato wedges in the oven with olive oil, I am planning to add garlic and sliced green chillies and smoked paprika at some point! I also have some  cooked white rice that I will add to the oily leftover pan at a point, got some cauliflower, coriander…. I also have wine to drink so this could get silly! 

Will update when I decide what to do next ha ha 🙂

I am hoping for crunch on my sweet potato wedges, they seem pretty soft, added a chopped green chillie peeper and a garlic clove and smoked paprika…smells divine 🙂

Once they crisp up, I am going to remove them and use the oil left to add some veggies, herbs and rice… I think 🙂

Ha ha my sweet potatoes smell lush and want them to crisp up!

I have chopped up some seasonal veggies, onion, courgette, chard oh and not so seasonal cauliflower, once I remove those wedges I am going to shove that lot in the oven in the left over oil, with lots of love, herbs, and think about adding the rice 🙂

Ta da….

once the rice and vegetable mix is heated through, very soothing to mix this up around the baking tray, I added a few pinches  of mild curry powder and hot sauce, I use Psycho juice, it’s an amazing hot chilli sauce 🙂 

Mix it all in, add the sweet potato wedges, mix them through, return to the oven and then serve up a huge portion of this, as it’s crazy amazing!

The sweet potato has a meaty type texture, the crunchy skins with chewy bits and then soft flesh, mixed through with different textures of vegetables and a braised tasty rice, comforting Vegan heaven!

I even thought a sprinkle of pumpkin and or sunflower seeds would be lovely, serve with Green salad if you fancy, or big slices of Beef tomato.

It would be lovely cold for lunch the next day, doubt there will be any left though 😋

Mushroom Biriyani .

I had lost this recipe and I was delighted to find it yesterday! Hence my blogging it today so I don’t lose it again.

It’s a lovely recipe if you fancy a curry in a hurry!

I made this slimming world friendly which would be syn free!

So here it is!

Spray a pan with fry light and fry mushrooms and finely chopped onion.

Or if not slimming world use 40g of butter (yum).

Spoon the mushroom and onion mixture into a bowl leaving any juice in the pan.

Add 1.5 teaspoons on Gram masala to the pan.

Add a small spoon of curry powder .

Add a thumb of finely chopped ginger and a mug of basmati rice.

Throw in a few Cardomon pods and 4 Bay leaves.

Dissolve a stock cube in 2 mugs of hot water and add the mushroom and onion.

Mix it all together and put into an oven proof dish with a lid.

Put into the oven for about 20- 30 mins.

Go and put your feet up with a nice Beer 🙂

Mix in fresh coriander and lots of Lemon juice.

Put a tea towel over the top for about 10 mins and then serve.

Delicious!

I am now glad I won’t lose this recipe again!

Sweet corn and yellow split pea soup â˜€ï¸ðŸŒ±

  lovely cheap and tasty recipe! I made this for my little boy who loves a bowl of soup. Full of protein and vitamins and a winner!

I had a bowl of it and made mine with the addition of fresh oregano and chilli flakes sprinkled over and my favourite hot sauce!

I have made this with a can of cheap sweet corn and used fresh. Both lovely!

I softened an onion and 3 sticks of celery. Added a chopped up peeled medium potato and a cup of yellow split peas! Added a good glug of boed water and a medium simmer until the peas are softening.

Add the sweet corn and if using fresh add in the kernel  middle bit and take out at the end. 

I mushed mine with a potato masher.

Serve to hungry bellies 🙂

Vegetarian pork pie! ðŸ·

As a vegetarian there are some particular foods I thought were unavailable to me again.
A good 'ole Pork pie was one such thing. Well that isn't the case at all…

I made this over two days.
Day 1
I made the Hot water pastry.
This is the reason my porky pie isn't vegan as it has been made with butter.
I will make it with Vegan margarine/ butter style as I read this works.
Also I will forget the egg wash.

I used 170 g of butter
2 1/2 full cups of flour.
100mls of hot water.

I softened the butter and added the hot water. Made sure the butter has melted and then added the flour.
Mixed it around and then formed a play doh consistency and put it in the fridge overnight, wrapped in cling film.

For the porky bit I used
2 slices of bread made into bread crumbs.
1 white onion chopped
2 cloves of garlic chopped.
6 vegan sausages defrosted (I used Linda Mcartneys)
1 cup of Veggie mince.
3/4 packet of silken Tofu
1/2 tin of borlotti beans
2 tablespoons of fresh sage.
1 big spoon of Thyme
1/4 teaspoon of both nutmeg and allspice.
Black pepper and salt.

In a food processor mix the onion, garlic, tofu and sausages into a smooth paste.
Add the remainder of the ingredients except the breadcrumbs.
I mixed those in last in a bowl to make the mixture thicker.
And voila the pastry is ready to roll out and the vegan porky bit is ready to go into the middle!!!
Make little cases and lids! Stuff with the pork middle and then bake in the oven on 160 degrees for 30- 40 mins.

I will be updating this entry with a photo of the end result in due course. I am afraid as I write this had forgotten about the ‘jelly’ in a regular pork pie but I intend to use Agar Agar to achieve this in my next attempt.

I intend to serve this with pickles and gherkins and and possibly a dollop of piccalilli !!! I can’t wait for lunch tomorrow.
Best bit of this is of course this is meat free happiness 🙂

Spanish Tortilla! Such a simple recipe with so much history, to add onion or not? Huge arguments may have been had over time! Three main ingredients works for me Eggs, potato, onion! However to jizz mine up I sprinkled smoked paprika:)
Here is the recipe..,

Finely slice a few potatoes, fry them in fry light or olive oil depending if you are slimming over about 20 mins until the potatoes are soft. Chop up a large onion (preferably not a red onion or they don’t look right) and add them to the potatoes and when they start to get soft add a sprinkle of white pepper. I also have microwaved the potatoes sliced up for quickness instead!
Mix up as many eggs as you fancy but it has to be at least six! Add a splash of milk if you fancy.
Fry the potato and onion mix util you want to eat it!
Add it to the eggs which will now be beaten.
Yes I said add the potato mix to the eggs!
Leave it in a bowl for 10 mins to let them get to know each other….. And then ooh whammy shove it all in a frying pan!
Use a spatula!!!
Let the runny egg get cooked!
Get a plate, turn the tortilla over.
Make sure it is cooked!
ALWAYS use free range eggs!!!
Sprinkle with fresh parsley and smoked Paprika 😍
I love this served cold with green salad and pickles 🙂

Smoked cheese, sausage, new potato tasty family bake!

I am a food shopaholic.
This week I am trying to avoid the shops. Having a good old butchers at the cupboards and the fridge I have been busy trying to use stuff up.
Tonight’s dinner was rustled up with glee at accidentally having the ingredients for a dish I have made again and again in the past.
It is delicious.
A real hearty meal when you fancy something nice that will warm you up and fill you up. It’s a meal that will satisfy everyone and smells divine.
Easily to make early in the day to cook through and soothe the soul when ready to eat.

What to do…….
4 big handfuls of chunkily diced boiled new potato.
5 veggie sausages cooked and chopped up.
1 red onion
Spring onions
Cherry tomatoes
Bramble apple chopped up
Lots of smoked cheese
Olive oil
Salt and pepper

Fry the onion until soft
Add the chopped up apple and gently fry.
Add the potatoes and mix around carefully.
Add the sausages,tomatoes,spring onions and cheese and mix it all together.
Once it is all heated through and the cheese is melted over all of the ingredients (yum) put it in a dish ready to go In the oven. Scatter some extra cheese on top if you fancy.

After a little flash in the oven when ready to eat….. Voila!

Other stuff….
I am in the process of buying my next property (this ‘things to do when you are forty’ post gone mad ) it’s thatched and wonderful.
Well it will be when someone loves it…
It has that feeling that it desperately needs someone to love it.
For example the en suite bathroom has the most awful bright blue bathroom. A little kindly painted Farrow and Ball in the right places will transform it and compliment those slate floors.
It has a bidet….. No idea what to do with it.
Now here comes the fun bit….. I am furnishing this property on a shoe string. The fees of buying a property take priority.
I have had to ‘change my ways’ I have learned to enjoy stuff second hand.
Yes, I said SECOND HAND!

I have become nicely addicted to freecycle you can give and take. Seriously!
I have wombled an undercounter free fridge freezer to go into our new home. In return we gave some of our eggs from our lovely chickens!
The undercounter fridge freezer is perfectly clean And in working order. Free.
My other wish was a Chesterfield sofa …I bagged a leather shabby chic one in a local area for hardly anything.
I can’t wait to have a few moments to offer a few items for free back to others……
So rather than send your bits and pieces to the tip or feel cluttered…. Pass them on to freecycle and let someone collect them……..One mans rubbish is another’s gold…….save our landfill too 🙂 #mummywomble

Cheesy garlic spiced polenta kievs

I have had a packet of polenta in my cupboard for sometime and hadn’t a clue what to do with it.
This evening I decided to do something with it so I have invented a recipe that is full of possibility!
The polenta Kiev is born……

I softened a red chilli and a clove of garlic in olive oil and at the last moment I added a tablespoon of rosemary. I put it aside.

I then put 800mls of water to boil in a pan and added 150 g of Polenta slowly.
Once thickened I added generous amount of salt and black pepper and 100g of cheddar cheese and the chilli mixture I mixed it all together and then on a flat surface I spread out the mixture.
I left it to cool and then made a mixture for the filling.
I used one Mozzarella ball and broke it up into a bowl I added a clove of garlic and butter.
I used a quarter of the polenta and put on a flat circle . Put a spoon of the mozzarella mixture into the centre and then encase the mozzarella with the polenta avoiding any cracks. I made three large kievs.
I then covered the kievs in a beaten egg and coated with dry polenta to make a crumb.
This is how they look as I have cooked them after dark the photo doesn’t do them justice!
I will put them in the oven later I might cover them in tin foil as I am sure the middle might run out!
