Courgette and butter bean fritters 🌱

I have made a very simple little snack! I had high hopes for this and it hasn’t disappointed me.

At this time of year vegetable growers are proudly plucking the last of their crops, giving away gluts of this and that.

Well if you have searched and found this look no further!

This is a very cheap recipe if things are a bit tight, or you are a scrooge.

You will need…..

A tin of butter beans

2 small or one large courgette or a fancy pants one if you so do wish, grate it finely and squeeze excess water off.

Herbs and spices of your choice

(I used ….

fresh coriander

Crushed coriander seeds

Cumin seed

Garam masala

Salt

Chick pea flour

And added chilli powder and a chillies finely chopped to half of the mix as my children are not chillie heads yet!

I mushed up the butter beans with a fork and mixed in the rest of the ingredients.

Made into little patties and coated in chick pea flour.

If you have time put them in the fridge.

Shallow fry the fritters for about five minutes. Turning each side.

Voila!!

Camping butter bean and sausage surprisep

I took a box of random food stuff camping. I wasn’t entirely sure what I was making and ended up making this lot…

The ‘surprise’ was that it was utterly delicious!
I fried 2 onions and garlic and added cumin. I stirred in chopped up Red Pepper and cooked it until softened.
I then added smoked paprika and cooked for a few moments longer. I then added a tin of tomatoes and a tin of Organic butter beans.
I added a few Bay leafs and let this cook gently.
On the barbecue I burnt the hell out of the Veggie sausages (as you do) and then chopped the sausages up minus the burnt bits and added them to the tomatoes. Cooked it for about another 10 mins. I then seasoned it all and at the last minute added a few handfuls of spinach.
Then serve! It was lovely served with (see my previous post) camping tatties and a blob of coleslaw.

Oh and some Garlic bread finished it off nicely!
Extremely tasty and both children loved it!

Tasty camper van tatties!

We went out for a Sunday drive in our loved Oval Beetle. We got some much needed fresh air and sunshine and got home a little bit late. My toddler was quite hungry and I needed to rustle up something quickly.
I have brought my son up Vegetarian. I haven’t a clue what other people think about this but he is a very healthy thriving toddler.
I made him a delicious little meal which he chomped his way through!

What I did was sautéed two thinly sliced potatoes in olive oil. When they began to soften I added a sliced shallot and sliced vegetarian sausage, I also raided the mint from the garden and found some rosemary and fresh oregano in the fridge, chopped it all up and threw it in.
Turning the potatoes so they cook evenly. At the very end I added some baby spinach and halved cherry tomatoes. Cooked for a few minutes longer.
Everyone kept hovering around the pan asking for a taste.
Needless to say I had to make another batch for our supper, I added chillies to ours!
This will be a great little meal when we go camping in our VW camper! I can’t wait to cook this in the fresh air.
