Feta and Courgette Quiche for Grown ups.

Having five Chickens means a lot of Eggs! Hence yesterday I was scratching my head on what to do with them all.
I also had a glut of Courgette from my Veg box. A great way to use up both was to make a lovely Quiche.
I was far too lazy to make my own Pastry and remembered I had some Puff pastry in my Freezer.
And Voila!!!!


And ready to eat I served it with Potato Croquettes and Salad and Mixed Pickles…. Delicious!


Vegan Quiche


I am not Vegan but I am more and more concerned about the Dairy industry and the cruelty afforded to animals for milk and eggs. I hold my hands up i have a bit of a cheese addiction and wish I didn’t but anyway I am trying to introduce more Vegan food into my diet.

This quiche is great made with Tofu as the ‘egg’ colored with a touch of tumeric for a yellow colour. I added too much so it really looks yellow but hey ho.

I am waiting to try this on my wonderspouse to see if he guesses its Vegan.

1 pack of Tofu

1/2 teaspoon of tumeric

1 medium onion chopped

1 diced pepper

3 chopped up mushrooms

2 chilli peppers

1 tsp of fresh thyme

1 tsp fresh oregano

slices of 2 ripe tomatoes

wholemeal pastry

Roll out pastry and bake blind. I used spelt flour and mixed in some pumkin seeds for some extra nutrition.

mash up the tofu and mix in the tumeric for colour.

Mix all of the other ingredients together with the Tofu and fill the pastry case, layer on the tomatoes and season.

oven bake until firm.

Ah Ha!! I found some self raising flour and we have plenty of butter in the house due to a ‘buy one get one free’ offer…. I am certainly not a a pastry expert but I am afraid move out of the way perfectionists this is about thrift!

I have a slightly soft  bit of broccoli, half a bag of spinich, and plenty of red onions some mushrooms i think it was four, and i also remembered about some chives growing in my very sad looking unattended vegetable patch and some chedder cheese which i will have to skrimp on as there is not alot left! Cheese is one of those things i get nervey about if there is not much left, but hey like i said i am over it ! or am i?

Only problem here is i have one egg, but this is not going to help so my partner is asked to raid the lovely honesty box of a local farm and brings six lovely fresh eggs home.


For the pastry….

1 200g of flour

2 80g of cold Butter

3 1 teaspoon mustard

4 2 Tablespoons of cold water

For the filling….

4 Free Range Eggs

2  Tablespoons of chives

100 MLs of milk

1 cup of broccoli florets

2 cups of baby spinich leafs

Half a cup of grated strong cheddar

Rub flour and butter together into *breadcrumbs*

Mix in the cold water and make into a ball and then roll out and line a flan dish, bake blind  for 15 mins at about 150 degrees in the oven.

Once cooled slice the red onion and scatter on pastry base, with the chives, broccoli, cheese and spinich.

Beat the eggs and milk together and pour over thevegetables.

 Bake in the oven until the Quiche is set on 150 degrees.
