Courgette and butter bean fritters 🌱

I have made a very simple little snack! I had high hopes for this and it hasn’t disappointed me.

At this time of year vegetable growers are proudly plucking the last of their crops, giving away gluts of this and that.

Well if you have searched and found this look no further!

This is a very cheap recipe if things are a bit tight, or you are a scrooge.

You will need…..

A tin of butter beans

2 small or one large courgette or a fancy pants one if you so do wish, grate it finely and squeeze excess water off.

Herbs and spices of your choice

(I used ….

fresh coriander

Crushed coriander seeds

Cumin seed

Garam masala

Salt

Chick pea flour

And added chilli powder and a chillies finely chopped to half of the mix as my children are not chillie heads yet!

I mushed up the butter beans with a fork and mixed in the rest of the ingredients.

Made into little patties and coated in chick pea flour.

If you have time put them in the fridge.

Shallow fry the fritters for about five minutes. Turning each side.

Voila!!

Vegan tuna

Well, well, well I thought this was going a bit far and the outcome would be rubbish! Not at all, a lovely fresh flavour and great texture and utterly healthy! Really quick and cheap to make! My meat eating wonderspouse polished it off!

1 can of chickpeas mushed

1 stick of celery finely diced

3 gherkins finely diced

Dried Seaweed a tablespoon

Vegan mayonnaise

Salt and pepper

Squeeze of lemon

Mix all of the above leave for an hour or better overnight.

Make a yummy sandwich or on top of a baked potato.

And sit and polish ones healthy halo as you eat this yummy and kind to the ocean bit of heaven 🙂

Leftover cauliflower and chickpea curry becomes a tasty Biriyani! 

Well you know that cauliflower and chickpea curry I made last week. Well I had plenty of leftovers!

So tonight’s dinner is a delicious Biriani, easy peasy to make.



Cook a mug of Basmati rice to instructions.

I warmed through the left over curry and added a courgette chopped up, some chopped coriander and a squeeze of lemon.

In an oven dish put a layer of rice then a the curry, finish with the remaining rice.

I scattered some coriander over the top and then warmed through in the oven until piping hot.

Served it with lemon wedges and poppadoms.



Living below the line

Life can be a surprise sometimes, in that you realise how bloody fortunate you have been. I have stumbled upon a blog which is truly heartwarming. It has taught me a lesson in my own ignorance to coping with living. It however has made me feel utterly Guilty. I didn’t realise or see how poverty affects people. I do now. How one amazing young lady lived off £1 and less to feed herself and her little boy. A DAY. In order to keep a roof over their heads.
I have been moaning this week that I have spent too much on food. I spent at least £140.
Something is wrong with these contrasts.
I need to change.
Could I feed myself and my Son for £1 a day?
Watch this space. I need to think this through.

Ooh YEY !!!

I am really pleased to announce I found my favorite thrifty/frugal Vegetarian well Vegan if you do not sprinkle with cheese and it is one of the most meaty hearty delishious meals which will become a firm favorite for all of us in jam jar cottage.

I would love you to make this and feedback to me what you think. It also is extremely nutritious given it has brown rice and kidney beans to provide lots of amino acids and complete proteins.

HEARTY  SLOW COOKER RICE AND MUSHROOM CASSEROLE

Serves 6

1 tbsp of cumin seeds

1tbsp vegetable oil

2 Onions chopped

4 Celery stalks chopped

2 garlic cloves minced

1 tbsp ginger chopped

1tsp salt

1 tsp crusshed black pepper

1 mug of brown rice

1/2 cup of sundried tomatoes

1 large tin of tomatoes

3 cups of vegetable stock

2 large portobello mushrooms, cut into chunky pieces.

grated cheese to scatter over when serving.

Gently fry onions and celery for a few mins until soft.

Add garlic,ginger,cumin,salt,pepper,rice and cook, stirring for 1 min. Add sun-dried tomatoes, tinned tomatoes and vegetable stock and bring to the boil.

Place mushrooms in slow cooker and kidney beans. Pour rice mixture over and stir to combine.

Place 2 clean tea towels folded accross the top of the slow cooker to help stop soggy rice.

We ate this with a crusty roll and butter with a lovely spinach  salad with  seeds and dressing.  Ching Ching!!!!

We are even considering this as a great camping recipe for our VW campervan adventures.

Slow cooked Savoury Chickpea Stew with Roasted Red Pepper Coulis

Another thrifty frugal meal that was a hit!

1 Large Aubergine peeled and cut into 2 inch chunks

1 Large Onion, finely chopped

2 Large Potatoes cut into 1 cm cubes

2 tins of tomatoes

1 can of chick peas

4 cloves of garlic

2 teaspoons of cumin seeds

1 teaspoon of Oregano

1/2 tsp of Tumeric

1 vegetable stock cube

gently fry onion over a medium heat in oil. Add the Aubergine until it begins to brown.

Add the garlic,cumin,oregano and Tumeric and cook for a minute. Add stock and tomatoes potatoes and chickpeas  heat and then transfer to slow cooker and cook on low for 7-8 hours or High for 4-5.

We had this with as usual a lovely fresh salad.

OOh Nearly forgot the coulis!!!

In a food processor combine……

2 Roasted Bell peppers

3 oil packed sun dried tomatoes

2 Tbsp of olive oil.

1 tbsp of Balsamic Vinegar

10 fresh Basil leaves

Vegetarian and Thrifty/Frugal

It is becoming a bit of an obsession.

 This new thrifty person has astonished my wonderspouse.

 I have bought the cheapest baked beans in the supermarket!!!! But I only use them IN a recipe, if its Beans on toast it has to be Heinz (double the price).

Today I spent £48.05 in Tesco. My feed a family of four for less than fiftya week home campaign is WINNING!!!!.

I Love food so do not want to compromise and to be honest so far so good in comparison to those stupid £137.00 A WEEK BILLS!

The ways I find that are working for me is sticking to a meal plan set out before I go shopping.

 When I see ‘extra’ things put into the shopping  trolly by wonderspouse-I take them out!!!

My main astonishment is I am eating the most delicious nutritious food, I am experimenting with flavours  and fusions all at little cost.

Tonights meal is…… Savoury Chickpea Stew with Roasted Red Pepper Coulis. with a  lovely Salad which has Tomato,cucumber,spinich,raw mushroom,pumpkin seed,homemade balsamic dressing.

I WOULD NEVER HAVE MADE A COULIS!!!! anyways I  have and  it is delicious (as i keep tasting it).

Natural homemade cleaning spray.

1 part water

1 part white vinegar

1/4 part lemon juice

10 drops of tea tree oil

10 drops of lavender

Mix it all together in an old cleaning spray bottle and use on all surfaces.

I,  was a little put off by the vinegar as i dont particularly want to smell like a portion of chips,the vinegar smell does fade and it seems to have cleaned my kitchen well and the bath looks as clean as usual.

 I am feeling quite virtuous with myself and it was cheap to make and good for the environment.

Thrifty shopping master plan.

Right then……

Cheap and cheerful meals it is then and a few surprises along the way.I have decided to try and feed us all for £50.  I had eagerness in my heart as i took my meal plan and shopping list to Tesco only to finally get to the till to find my shopping cost me £57. THIS WAS NOT THE PLAN……..AAAARRRRGGHHHHH!!!!!

Then i realised….. amongst my shopping was cat food and dog food a bottle of wine and buy one get one free shamppoo/conditioner.

so in my opinion I achieved it!!

Some of the meals on this week’s menu are not flying my rocket to be honest, however I have trialed what i call’ scouts dinner’ and it went down well with my wonderspouse and made a big meal with left overs.

SCOUT’S DINNER

1 pkt of Veggie Sausages grilled and chopped into chunks

1 tin of tomato

1 tin of sweetcorn

1 onion

3 medium potatos sliced thinly

Red Leicester cheese grated

To Veganise this recipe just use Vegan sausages and use a vegan cheese.

 

Mix the Chopped sausages, Onion Beans and Tomatos together.

Layer the potato over the top of the mixture .

sprinkle  over the cheese

Bake in the oven for 45 mins .I covered with tin foil and then removed the tinfoil the last 15 mins
