Koshari Rice #fridaymydaymoments

I am really excited by Koshari rice 🙂

To me it's like a new Invention of taste, possibly a little bit like curry there are similiar but different  versions .

All scrummy but this to me can't be rushed…….

Egyptian rice! a street food that I would truly love have made for me and buy in its home place 🙂

If you are not familiar with it it sounds rather strange!

To me it has become intriguing what's not to like about a spiced tomato sauce,.
Underneath is rice with surprises including mustard seeds , cumin, other spices Green lentils. On top are Onions that have been loved and adored for an hour as they become crispy.

Oh and then the addition of Macaroni!!!!

Believe me it works!

I am inventing a hashtag for my love of a happy Friday moment!

And that amazing mother of a tomato spiced sauce that mothers the whole dish and makes it amazing 🙂

Layers of crazy happiness:)

Will post my recipe ASAP 😉

I would love everyone to share their #fridaymydaymoments

I am not giving my recipe away……, (yet) 💜🌱

Gino’s ‘no cook’ tomato sauce with spaghetti

Simple, quick and cheap! Most of all tasty.
Boil spaghetti. I love the very long spaghetti!
A few glugs of Extra Virgin Olive oil in a bowl and a pinch of salt.
I chopped up one beef tomato that was lying about and a few cherry plum tomatoes that were at their ripest.
I tore up quite a few basil leaves and added them both to the olive oil.
I finely chopped a very small clove of garlic and added it to the tomato mix.

Waited for the spaghetti to cook and then mixed the lot together.
A final scattering of torn basil leaves and some Parmesan.

Fussy Toddler Winner Spaghetti

Toddler eating issues have been plaguing me. My *proud mummy * of a child that eats really well bubble has popped. He eats and throws it. He turns his head too. And then eats it when he wants it. Refuses when I offer *one more* Ugh!!!!!

I had a Eureka moment!!

Spaghetti!!

I remembered….

He loves it.

I decided if he won’t eat this then it’s definitely teething or some other Malady.

Oh yes! His little bowl that I filled to the brim with freshly cooked Pasta and vegetables *gone*

Vegetarian and Thrifty/Frugal

It is becoming a bit of an obsession.

This new thrifty person has astonished my wonderspouse.

I have bought the cheapest baked beans in the supermarket!!!! But I only use them IN a recipe, if its Beans on toast it has to be Heinz (double the price).

Today I spent £48.05 in Tesco. My feed a family of four for less than fiftya week home campaign is WINNING!!!!.

I Love food so do not want to compromise and to be honest so far so good in comparison to those stupid £137.00 A WEEK BILLS!

The ways I find that are working for me is sticking to a meal plan set out before I go shopping.

When I see ‘extra’ things put into the shopping  trolly by wonderspouse-I take them out!!!

My main astonishment is I am eating the most delicious nutritious food, I am experimenting with flavours  and fusions all at little cost.

Tonights meal is…… Savoury Chickpea Stew with Roasted Red Pepper Coulis. with a  lovely Salad which has Tomato, cucumber, spinich, raw mushroom, pumpkin seed, homemade balsamic dressing.

I WOULD NEVER HAVE MADE A COULIS!!!! anyways I  have and  it is delicious (as i keep tasting it).
